These brownies are exactly what they sound like, small enough to eat in two bites! I wanted to make a less sugary version of the store bought equivalent, so I sweetened these treats with honey and semi-sweet chocolate chips. This recipe is Gluten-free and Dairy-free if you use semi-sweet or dairy-free chocolate chips. I've also used coconut oil as a dairy-free alternative and it is a source of healthy fats. So yes, Mama Needs a Brownie and it happens to be a lot healthier than your average chocolately dessert!
Ingredients:
-1 1/3 cup Gluten-Free Flour (Bob's Red Mill 1 to 1 Baking Flour)
-1/4 cup cocoa powder
-1 tsp baking powder
-3 eggs
-1/4 cup honey
-1/3 cup melted coconut oil
-1/3 cup unsweetened almond milk
-1/2 cup semi-sweet chocolate chips
Mix all ingredients as listed in a medium bowl until the batter is smooth. I used a large spoon, but you can use an electric mixer to avoid any lumps in the batter.
Pour batter into greased mini muffin tin. It is very important to use butter or coconut oil or these will stick! Bake at 375 for 12-15 minutes. You will want to bake them longer if your brownies are larger. Recipe Yields 24 mini brownies.
