Apple Crisp Cookies


Apple crisp is the taste of fall for me. Fresh apples, cinnamon and crumbly oats. I decided to make a cookie version since it’s easier to eat on the go or while I’m holding my baby girl ! 


These cookies are both gluten-free, vegan and sweetened with honey. A perfect fall inspired treat that is easy to make and portable for snacking. Try also make a great dessert warmed up with a little ice cream!

Ingredients: 

-1 cup oats

-1/2 cup gluten-free flour

-1 tsp cinnamon 

-1/2 tsp pumpkin pie spice 

-2 tbsp honey 

-1/4 cup plant based butter, melted 

-2 tbsp unsweetened almond milk 

-1 medium diced apple 

Mix ingredients as listed in medium bowl. Roll dough into 1-2 inch balls. Place on baking cookie sheet or stoneware. Bake at 350 degrees for 10-12 minutes until golden. Let cool & enjoy! Recipe yields 12 cookies.
