Blueberry Lemon Squares


 These fresh and fruity squares are perfect for a midday summer snack or dessert for the whole family to enjoy! This gluten-free recipe is also dairy-free and sweetened naturally with maple syrup. 


Ingredients: 

-3/4 cup gluten-free flour

-1/4 cup oats

-1 tsp baking powder 

-1/4 tsp baking soda 

-1/3 cup melted coconut oil 

-3 tbsp maple syrup

-1/3 cup unsweetened almond milk

-1 tsp vanilla extract 

-1 tbsp fresh lemon juice

-zest of 1/2 lemon 

-1 cup blueberries 

Mix all ingredients in a medium bowl as listed. Pour batter into greased 9x9 glass baking dish.

Bake at 350 degrees for 25-30 minutes. Recipe Yields 12 small squares.
