These muffins are a fun way to kickstart your morning with the taste of coffee and chocolate!
They are sweetened naturally with a bananas and maple syrup. The secret ingredient for an energy boost is The Collagen Coffee Boost by BioBonafide.

This recipe is gluten-free and dairy-free.
Recipe yields 12 medium muffins. Suggested serving size = 2 muffins
Ingredients:
-2 bananas (mashed)
-2 eggs
-1/3 cup unsweetened almond milk
-2 tbsp maple syrup
-2 scoops BioBonafide Coffee Collagen Boost (can be substituted with 2 tsp instant coffee)
-1/2 cup oats
-1/2 cup gluten-free flour (Bob’s Red Mill 1 to 1)
-1 tbsp cocoa powder
-1 tsp baking powder
-1/4 tsp baking soda
-*optional 1/4 cup chocolate chips, I added this amount and then 3 on top of each once the batter was in the muffin tins
Mix all ingredients as listed in large mixing bowl. Pour batter into greased muffin tin with butter or coconut oil. Fill 3/4 full for each muffin. Bake at 350 degrees for 25-30 minutes.Let cool and Enjoy!
