These muffins are great for a quick breakfast or an afternoon snack. I made a "small batch" of 6 medium muffins to switch up my usual morning muffin flavours. You can double this recipe for 12 medium sized muffins. This recipe is both gluten-free and vegan.
-1/2 cup oats
-1/2 cup Gluten-free flour (Bob's Red Mill 1 to 1)
-3 Tbsp golden flaxseed meal (or ground flaxseed)
-1 tsp baking powder
-1/4 tsp baking soda
-1/2 tsp pumpkin pie spice
-1/4 cup melted coconut oil
-3/4 cup unsweetened almond milk
-2 Tbsp maple syrup
-1/4 cup dried cranberries
