If you have very ripe bananas that need to be eaten this is your opportunity to make something besides banana bread! These brownies are so fudgey and moist, a great treat if you are craving chocolate. This recipe is vegan and gluten-free! The brownies taste best warm but I actually had some cold from the fridge and it tasted just as good on a hot summer day!
Ingredients:
-2 very ripe bananas (mashed)
-1/4 cup coconut oil
-1/3 cup unsweetened almond milk
-2 tbsp maple syrup
-1 tsp baking powder
-2 tbsp cocoa
-1/2 cup gluten-free flour
-1/2 cup semi-sweet/dairy-free chocolate chips
Mix ingredients as listed in a medium bowl. Mash bananas with a fork, adding the coconut oil to the mashed mixture. Then use a large spoon to mix the remaining ingredients.
Pour batter into greased (with coconut oil) 9x9 square glass baking dish. Bake at 350 for 30-35 minutes. Recipe yields 12 brownies. Store at room temperature or in the fridge in a sealed container.
