Fudgey Banana Brownies


If you have very ripe bananas that need to be eaten this is your opportunity to make something besides banana bread! These brownies are so fudgey and moist, a great treat if you are craving chocolate. This recipe is vegan and gluten-free! 

The brownies taste best warm but I actually had some cold from the fridge and it tasted just as good on a hot summer day! 


Ingredients: 


-2 very ripe bananas (mashed)

-1/4 cup coconut oil 

-1/3 cup unsweetened almond milk

-2 tbsp maple syrup

-1 tsp baking powder 

-2 tbsp cocoa

-1/2 cup gluten-free flour 

-1/2 cup semi-sweet/dairy-free chocolate chips 


Mix ingredients as listed in a medium bowl. Mash bananas with a fork, adding the coconut oil to the mashed mixture. Then use a large spoon to mix the remaining ingredients. 


Pour batter into greased (with coconut oil) 9x9 square glass baking dish. Bake at 350 for 30-35 minutes. Recipe yields 12 brownies. Store at room temperature or in the fridge in a sealed container.
