Healthy Pumpkin Spice Muffins

I wanted to make pumpkin spice muffins that were both healthy and delicious. These are perfect for a quick breakfast or afternoon snack. They are not too sweet and filled with fibre from the oats, flaxseed and pumpkin which can help regulate blood sugar levels. I’ve added chocolate chips for a little touch of decadence and they are placed in a fun jack-o-lantern design. 

Pumpkin is not only a delicious seasonal treat, but it has many health benefits and is a great source of Vitamin C, E, beta-carotene, iron, potassium, L-tryptophan and antioxidants.

Ingredients: 

-3/4 cup gluten-free flour

-3/4 cup oats 

-3 tbsp flaxseed meal or ground flaxseed 

-1 tsp baking powder

-1/2 baking soda

-1 tsp pumpkin pie spice 

-2 eggs 

-2/3 cup unsweetened almond milk

-1/2 cup pumpkin purée 

-2 tbsp maple syrup 

Mix ingredients as listed in medium bowl. Our batter into greased muffin tin. Place chocolate chips on top of batter to make a jack-o-lantern design. Recipe yields 10-12 medium muffins. Bake at 350 degrees for 20-25 minutes. Let cool & enjoy ! Store in air tight container for 2-3 days at room temperature or freeze for future use.
