Meal Prep Blueberry Muffins


Every week I have been making muffins as apart of my meal prep. Mornings can be very busy and it can be hard to find the time to make and eat breakfast. I can eat these with one hand while I hold a baby in the other arm. 

These muffins are gluten-free and dairy-free and contain healthy ingredients to keep you feeling energized. Most of us do not eat enough fibre daily, that’s why I included the oats, flaxseed and blueberries! Along with the fibre, the healthy fats from the eggs and coconut oil will help to stabilize blood sugar. I’ve sweetened these naturally with honey which contains more nutrients than sugar and tastes delicious. 




Ingredients: 

-1 cup gluten-free flour

-1/2 cup oats 

-3 tbsp flaxseed meal or ground flaxseed 

-1 tsp baking powder

-1/2 tsp baking soda 

-1 tsp cinnamon 

-2 eggs 

-2 tbsp honey 

-1/3 cup melted coconut oil 

-1 cup unsweetened almond milk 

-1 cup blueberries 



Mix ingredients as listed in medium bowl. Pour batter into greased muffin tins. Bake at 350 for 20-25 minutes until golden brown. Let Cool & Enjoy ! I freeze most of mine so they last a little longer and get me through the week ! 

Recipe yields 12 medium muffins. 

Suggested serving = 2 muffins.
