I have been so excited to make these Pumpkin Spice donuts ! They are so soft & fluffy and full of pumpkin flavour. I made them both gluten-free and vegan for everyone to enjoy. They are sweetened with honey and you can also top them off with an optional glaze for extra sweetness if you are planning to serve them as a dessert.
Batter:
-1 cup gluten-free flour (I used Bob’s Red Mill 1 to 1 baking flour
-1 tsp baking powder
-1/2 tsp baking soda
-1 tsp pumpkin pie spice
-1/2 cup pumpkin purée
-1/4 cup melted plant based butter (I used the President’s Choice unsalted plant based butter)-2 tbsp honey
-3/4 cup unsweetened almond milk
Glaze:
-1/3 cup icing sugar
-1/4 tsp cinnamon
-1 tbsp unsweetened almond milk
Mix batter ingredients as listed in a medium bowl with a spoon or you can use an electric mixer. Pour batter into greased donut pan, filling each mold completely to the top.Bake at 350 degrees for 15-20 minutes until golden. Let cool and remove from pan, flipping the donuts over so the bottoms are now the tops. Mix the glaze in a small bowl and drizzle over the donuts. You likely will not use the entire glaze, you may adjust the amount on each donut depending on how sweet you want them to taste. I had about 1/3 of the mixture leftover.
