Since it is November, I’m not in full Holiday Baking mode yet and enjoying the rest of fall. It is cold season and when I’m feeling under the weather my body needs a little extra protein and comforting food to get through the day. I was craving cinnamon raisin cookies and I figured I would add some vegan protein to give myself a boost! These little cookies are both vegan and gluten-free.
Ingredients:
-3/4 cup gluten-free flour (Robin Hood)
-3/4 cup oats
-1 tsp baking powder
-2 tsp cinnamon
-1 scoop vanilla vegan protein powder (Genuine Health)
-1/4 cup honey
-1/4 cup melted coconut oil
-1/4 cup unsweetened vanilla almond milk
-1/2 cup raisins
Mix ingredients as listed in medium bowl with large spoon. Roll dough into 1 inch balls, place on baking stone or lightly greased cookie sheet. Bake at 350 degrees for 8-10 minutes. Recipe yields 12-14 small cookies. Let cool & Enjoy!
