Hot Cocoa Cookies

 

These  chocolately bites of goodness are perfect for indulging while snuggled up by the fireplace. You can dip them in a warm cup of cocoa or latte to get you in the holiday spirit. These cookies are dairy-free & gluten-free. A great dessert for entertaining and not too sweet ! 


Ingredients:

-1 1/4 cup gluten-free flour (Bob’s Red Mill 1 to 1 Baking flour) 

-1/4 cup cocoa powder 

-1 tsp baking powder 

-1/4 cup maple syrup 

-1/4 cup unsweetened coconut milk 

-1 egg 

-1 tsp vanilla 

-1/4 cup plant based butter, melted 

-1/2 cup semi-sweet chocolate chips 

*optional 1 cup mini marshmallows 


Mix ingredients as listed in medium bowl as listed, except for the marshmallows. Refrigerate dough for 20 minutes. Roll dough into 2 inch balls and press into cookies on baking stone or cookie sheet. Bake at 350 degrees for 9 minutes. Take cookies out of oven and add 3-4 mini marshmallows on top of each cookie. Bake for 2 more minutes. Remove from oven, let cool and enjoy with a cup of hot cocoa.
