Chocolate Avocado Muffins


I honestly  always have ripe bananas and avocados sitting on my kitchen counter so I thought I’d put them to good use! I LOVE this recipe because it satisfies my chocolate cravings AND has healthy ingredients. I initially made these for breakfast but they were surprisingly rich & sweet for an afternoon pick me up or evening dessert! 



Ingredients: 

-1 cup oat flour 

-1/4 cup cocoa powder 

-1 tsp baking powder 

-1 tsp baking soda 

Mix dry ingredients in large bowl and set aside. 

In a small bowl mash: 

-1 avocado (1/3 cup mashed)

-1 medium ripe banana 

Add the following wet ingredients to dry mixture followed by the banana & avocado. 

-1 cup unsweetened almond milk 

-2 eggs 

-2-3 tbsp maple syrup or molasses 

Mix all ingredients until the batter is smooth and then add:

-1/2 cup semi-sweet chocolate chips


Pour batter into greased muffin tin and bake at 350 for 20-25 minutes. Recipe yields 12 medium muffins
